Fajita Pizza Bake
( Serves 8 )
Ingredients:
16 oz. pre-cooked fajita meat (chicken or beef)
14 oz. thawed Southwest Blend frozen vegetables (corn, black beans, poblano peppers, onions & red peppers)
12 Flour Tortillas (I use 8”, any size will work but you may need to adjust)
6 oz. Salsa Roja (red sauce)
12 oz. shredded Colby-jack cheese ( I use this as I always have it on hand any shredded Mexican style cheese works well as well.)
Preheat oven to 350°
On a large non stick or sprayed cookie sheet place four tortillas and layer with sauce, cheese, fajita meat, and vegetables. Place another tortilla on top of that and repeat layer. Cover second layer with tortilla, layer with red sauce and more cheese. Repeat for all 4 pizzas.
Bake at 350° for 35-45 minutes until top is nice and bubbly.
